Cranberry Coconut Pancakes

The younger fives were craving pancakes this morning. Even though I had a busy morning of baking in front of me I couldn’t refuse them a yummy start to their day. However, I wasn’t in the mood to make plain pancakes. Since we are all out of blueberries I decided to try and slip some cranberries into the batter and see if the kids noticed. I started with our tried and true vegan pancake recipe then added spices, chopped cranberries, and coconut flakes. And wallah! We had a scrumptious batch of pancakes that everyone devoured. The tangy cranberries tasted great with the sweet maple syrup and we now have a new fall recipe to enjoy!

Vegan Cranberry Coconut Pancakes

  • 2 cups white flour
  • ½ cup wheat flour
  • 4 tsp baking powder
  • 1 tsp salt
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • ½ tsp ground nutmeg
  • A bit less than 1/8 tsp ground cloves
  • 4 TBS melted coconut oil
  • 2/3 cup water (warmed)
  • 2 TBS maple syrup
  • 2 TBS agave nectar
  • 2 tsp vanilla
  • 1 cup soy milk (warmed)
  • 1 cup coconut milk (warmed)
  • 1/2 to 1 cup chopped cranberries (depending on preference)
  • ½ cup coconut flakes
